Chicken Soup for the Dog Mom's Soul

It's snowing outside, so I roasted a 6-lb. chicken for dinner (think comfort food). Tomorrow, I'll use the stock I made from boiling the carcass and pan drippings to make a big steaming pot of deee-licious chicken noodle soup. Since many of you are dealing with, well, frightful weather, too, it pleases me to share this delightful recipe.

Please, however, note:
  • I can cook, but I'm not a cook - this recipe is foolproof.
  • Don't hold your breath that I'll ever post another recipe; this is, in fact, not a cooking blog. :)
HOMESTYLE CHICKEN NOODLE SOUP

(makes 6 to 8 servings)

1/4  cup butter
3     medium carrots, thinly sliced (or a 1-lb. bag of crinkle-cut carrot chips)
1     onion, chopped
1     cup thinly sliced celery (about three ribs)
1     8-oz. (or close to it) package of sliced baby bella mushrooms
3     quarts chicken broth
       (I boiled my chicken carcass + pan drippings in 3 quarts of water for 30 min.,
         then strained out the broth.) 
1     bay leaf
2     teaspoons minced fresh thyme (or 1 tsp. dried)
1     teaspoon salt (I use sea salt and add extra to taste since my broth is not salted.)
1/2  teaspoon ground black pepper
2     cups (more if desired) shredded cooked chicken
2     cups uncooked wide egg noodles

In a large Dutch oven, melt butter over medium-high heat.  Add carrots, onion, celery and mushrooms; cook 6-7 minutes, stirring frequently, or until tender.  Add broth, bay leaf, thyme, salt and pepper; bring to a boil, reduce heat, and simmer, 15 minutes.  Stir in chicken and noodles; simmer 8 to 10 minutes, or until noodles are tender.  Garnish with fresh thyme, if desired.  Enjoy. :)

  1. Now that's one thing I've never made is homemade chicken noodle soup. Since it's a Paula Deen recipe, of course it has at least a little butter in there. ;-) Mo' butter, mo' better!

    My last soup effort was making a meat-only chili from The Meat Bible and it took forever and tasted like crap. And my kitchen looked like something exploded in there. Should've stuck with the old Ukrop's recipe I've used for years. This weekend I want to make Greek Lemon Chicken Soup, it is sooo good.

  2. Elizabeth & Builder Mama - Any chance I'll see both of you at the show in Doswell Sunday morning? Cardis are on at 8am but there are several breeds/dogs ahead of us so I expect we won't start going in the ring until closer to 8:30 or 8:45.

  3. Oh, it's this weekend? Hmmm...I would love to, but probably not. We have to make the "Hell Run" between Richmond/Clarksville/Danville on Saturday and I'm supposed to have my niece for a playdate with my son on Sunday at some point. I'll have to make a judgement call Saturday night depending on how hellish the day is! Who is competing in your crew?

  4. Just Princess Pretty Pants - Georgia. She's my only active conformation dog these days. Her brother, Bogey, will be along for the ride. Oh, and the following weekend it looks like I will get a chance to meet The Ocho :)

  5. JF and I will be there - hopefully by 8 (I wouldn't mind seeing the other breeds ahead of the Cardis). JF's even getting his hair and feet done w/a groomer tomorrow - so he doesn't embarrass his siblings. :) He's shed out a LOT of coat and needs some help. My e-mail is evtk68@aol.com.     Builder Mama - If you can't make it, we should try and meet up sometime (just us or all three of us) - especially since we're ALL in the Samily. :) Also, I must see the poopster.

  6. Too funny! I was going to offer to give JF a bit of a trim, if you wanted me to. We can talk about fluff-management this weekend too - the tools that can help you if you don't want to take him to a groomer all the time :) I'll drop you an email shortly.
    I was thinking of having a "Samily Reunion" when the weather gets a bit warmer. There is an agility field less than a mile from my house where we could meet, let the puppers play and even let them use some of the lower, safer equipment (tunnels, jumps).

  7. RDM, you're meeting The Ocho? I'm flying down there on 2/11, I am sooo excited. I feel like I'm meeting a bunch of rockstars. You'll have to let me know what you think about the little poopsters!

    I would love to meet up with everyone sometime! Even if I come Sunday, I am probably not going to be bringing Rufus. I think his head would explode with all the dogs and people. Not to mention he is really blowing coat right now and looks downright embarrassing. Every time he sees me coming with the Furminator he mysteriously disappears. Even food bribery isn't working this week.

  9. Yay! Looking forward to seeing everyone. Do you all need the address? Georgia is inordinately fond of youngsters so I'm sure she will be thrilled to see the Boy too. Oh and we should all go ahead and exchange contact info then too :)

  10. I got the address from infodog.com. Looks like it's down the road (same road) from King's Dominion. That shouldn't be hard to find.

  11. I think I know where it is - we went up there for the State Fair in September. It says Gate 3, Farm Bureau Pavilion...that's the place to be? 8 AM on Sunday?

    Just a warning - the Boy doesn't know about the potential puppy yet. We didn't want to tell him until after I go to Chattanooga and things are firmed up, just in case it didn't work out. :-) He is going to be so surprised! So if you don't mind keeping that under your hats...he does know about The Ocho and how the Samily is related, but that's as far as I've gone with it.
